Orange Espresso Fizz Mocktail

Ingredients:
Orange Syrup:
- 6 full oranges worth of peels
- 2 full lemons worth of peels
- 6 cups of raw sugar
- 3 cups of fresh orange juice (no pulp)
- 4 cups of water
Drink:
- Topo Chico
- 1.5 oz cold brew concentrate
- 10 g almond syrup
- Fresh cherry or maraschino
- Ice
- 20 g cherry simple syrup

Instructions:
Orange Syrup:
- Mix ingredients
- Bring to a boil, simmer for 10 minutes, add 6 g vanilla extract, mix, strain mixture
Drink:
- 40 g orange syrup
- Add fresh double shot of espresso over the syrup and mix
- Grab your 12 oz cup with ice; Fill cup half way with Topo Chico
- Slowly pour espresso mix over top
- Lightly stir
- Let foam settle and add more Topo Chico if needed
- Add shaved nutmeg on top and garnish with dehydrated candied orange slice
