Secret Healthy Sweet Delicious Summer Beet Salad

Ingredients:
- 4 medium beets scrubbed, trimmed, and halved
- 10 ounces mixed baby salad greens
- 2 tablespoons extra virgin olive oil
- 2 teaspoons aged balsamic vinegar
- 3 ounces goat cheese
Directions:
- Place beets in saucepan, cover with water, and bring to a boil. Cook for 20–30 minutes. Drain, cool, and cut beets into cubes.
- To make the dressing, whisk together balsamic vinegar and olive oil in a small bowl.
- Place large portion of baby greens onto each salad plate, followed by beets. Top with goat cheese and a drizzle of the dressing.
- Fall back in love with salads.
